Juxtaposed against that last ho-hum post, I will say that yesterday’s eats were fantastic. I started off with a heuvos rancheros recipe I got off of SkinnyTaste and adjusted for what I had available and what my food intolerances can deal with.
I wanted something sweet, so I had a champagne mango. One of my top 5 favourite fruits of all time!
I revisited SkinnyTaste and got a chicken zucchini rollatini recipe that turned out fantastic. I paired it with a huge, simple salad of grapes, sunflower seeds, and Italian dressing.
R wanted something fast and tasty, so I cooked up some chicken breast and onions, and we had it over nachos.
Nom nom nom!
I also went out and did week 3 of C25K (and didn’t even die!), and later on in the evening I used the Health Walker for 45 minutes.
